The Culinary Supervisor has basic skills in department training and is capable of assuming department responsibilities in the absence of Sous Chef/Executive Chef. Skills and knowledge to include culinary education, basic cost control understanding, basic communication, leadership skills and computer skills. May assist in monitoring payroll costs & overtime. Responsibilities include the supervising of hourly cooks.
· Assist and supervise hourly preparation and banquet cooks
· Monitor completion of opening temperature logs
· Open & closing kitchens (turn on equipment in the prep kitchen and dish area, floor mats, etc.)
· Communicate with fleeting sous chef MOD about any order and prep needs
· Execute breakfast/lunch banquets with assistance form Fleeting/Banquet managers and team as needed
· Assist cafeteria attendants with maintaining café space and preparing food for the cafeteria as needed
· Checking out prep staff – go through prep and closing/cleaning lists before leaving
· Make sure you and your staff are taking breaks daily as business allows
· Training of line level employees
· Assist chef team with menu development
· Communicate with Sous Chef MOD about any maintenance issues/put into HotSos as needed
· All other duties as assigned by leadership
Qualifications
- A true desire to satisfy the needs of others in a fast paced environment.
- Refined verbal communication skills.
- Must have physical stamina to stand for long periods
- 2 years previous culinary experience required, preferably in a hotel
- Shifts vary, 5 days per week including weekends and holidays
